Sugar-free Elderflower Syrup

 

10-12 elderflower heads ( remove as much stem as you can )

A chopped chunk of fresh ginger

2 unwaxed, organic lemons

250ml water

450g local honey*

 

Place the elderflowers in a bowl removing as much of the stem as you can. Add the chopped ginger. Add the zest of one lemon and the juice of both lemons. Boil the water and pour over these. Push down the elderflowers so that they are submerged in the hot water.  Add the honey* and stir to combine. Cover the bowl and leave everything to infuse overnight for at least 12 hours.

Strain through a cloth after 12-24 hours of infusion. Store the elixir in the fridge and serve like a cordial diluted with water, sparkling water or as an addition to your cocktails.

Take a tablespoon each day to build your resilience to hayfever.

*Experiment with date syrup or apple concentrate to make a vegan version.
